Recipe - Chocolate galce without ice cream maker

Meloé and Jon's worry-free chocolate ice cream without an ice cream maker.

If an ice cream maker seems essential for making chocolate ice cream, with this recipe, fear not: no special equipment is needed. The only dilemma is choosing the right chocolate for you: 65% for indulgence, 75% or more for intensity.

  • For 1 liter of ice cream
  • Preparation: 20 minutes and 12 hours of resting time
  • Cooking: none

Ingredients:

  • 200g dark chocolate (50g to be reserved for shards)
  • 80g sugar
  • 2 eggs and 1 yolk
  • 25cl whole cream

Preparation:

  1. Take the eggs and egg yolk out in advance so they reach room temperature and prepare 50g of chocolate shards.
  2. Place the cream in a bowl with the whisk and put the whole thing in the freezer for 20 minutes.
  3. In the meantime, whisk the eggs and sugar for about 5 minutes until they form a frothy mixture.
  4. Melt 150g of chocolate in a bain-marie and let it cool slightly before adding it to the mixture.
  5. Take the cream out of the freezer and immediately whip it into very stiff peaks (about 3-4 minutes).
  6. Add the whipped cream to the mixture, then the chocolate shards. Pour everything into a freezer-safe container.
  7. Let it rest for 12 hours before serving.

Tip #1

If some of your chocolate bars have bloomed (turned white), don't throw them away! Only the appearance of the bar changes, but the taste is not affected! They are still perfect for a delicious recipe.

.Tip #2

If you want to add chocolate chips, use a different chocolate (percentage or origin) to create a contrast. If you don't have another bar in your cupboards, don't worry: you can replace the chips with, for example, cocoa nibs, toasted hazelnuts, or caramel shards.
