Established in 2014, the Raaka adventure was founded by Rayan Cheney and his chocolatier Nate Hodge. Raaka's chocolate factory is based in Red Hook, Brooklyn and specialises in unroasted artisan chocolate. This is a rare process, which can only be carried out with cocoa that is single origin, traceable and of the highest quality. The result is exceptional, and is based on genuine control of the fermentation process to bring out the very best of the cocoa's aromas. In their workshop, the Raaka team transforms the precious beans, respecting all the transformation processes with the exception of roasting, which is deliberately omitted to convey a different and exciting vision of cocoa flavours. Raaka's vision is also to offer total transparency on the origin of the beans and the costs involved. Raaka buys cocoa directly from cooperatives and producer organisations that focus on quality, sustainability, on-the-ground support, market access and higher prices for farmers. The price paid per tonne of cocoa is printed on the inside of each bar pack.

The Dominican Zorzal Cacao farm is located in a bird sanctuary in the province of Duarte. Anchored in this protected area, it contributes directly to the reforestation and forest cover of this reserve, as well as protecting biodiversity. The Zorzal farm is yet another example of collaboration between alternative cocoa farming and environmental conservation.
